    Recommendation

    this is a recipe we are trying to adapt from doing by hand. for best results though, fold cream into chocolate slowly by hand. then fold the cream/chocolate mix into the eggs white taking your time to keep as much air in the egg whites as possible. i have only tried this once on the machine and although nice, it still needs some tweaks to match the "by hand" method

    Ingredients For 4 serves

    3 egg white
    0.25 cup (AUS 250 ml) castor sugar
    315 milliliter cream
    200 gram dark chocolate, 50% cocoa
    3 egg yolks
    1 tablespoon (AUS 20ml) brandy
