Recommendation
This recipe is from the Thermomix community recipe site and produce delicious & moist cupcakes.
I've adapted the timing/speeds slightly for my Supercook (Australia) machine and our personal tastes (some people use double cans for the kidney beans)
You can also bake in an 18-20cm greased and lined spring-form cake tin for 40 minutes or until an inserted skewer comes out clean.
Ingredients For 12 serves
1 can | Red Kidney Beans (410g can), drained, rinsed | |
1 tablespoon 15ml | water or coffee | |
1 teaspoon | vanilla extract | |
140 gram | rapadura sugar (or coconut or brown sugar) | |
125 gram | butter, room temperature | |
5 | eggs | |
50 gram | unsweetened cocoa powder | |
1 teaspoon | GF Baking Powder | |
1/2 teaspoon | bicarb soda | |
1/4 teaspoon | Himalayan pink salt |
